Paleo Cinnamon Raisin Bread (double Loaf)

4 cups almond flour
4 tablespoon ground cinnamon
2 teaspoon baking soda
½ teaspoon sea salt

10 eggs
½ cup coconut oil, melted
½ cup honey
2 teaspoon vanilla
1 cup raisins
½ cup walnuts (optional)

Notes: I use tart dried cherries and no nuts.


Preheat oven to 350 degrees. Line a bread pan with parchment paper, so that 2 inches hangs off each side.
Combine almond flour, cinnamon, baking soda, and salt in a medium sized bowl.
Combine eggs, honey, coconut oil, and vanilla in a large bowl. Using a hand mixer, blend until well combined.
Slowly add the dry ingredients to the wet, and continue mixing.
Fold in raisins and walnuts and pour the batter into the bread pans.
Bake for about 40-45 minutes, or until a toothpick comes out clean in the center.
