APPLE COFFEE CAKE – STREUSEL TOPPING
(Combination coffee cake and pie)

Streusel Topping:

½ cup sugar
4 tablespoons flour
1 teaspoon cinnamon
2 tablespoon soft butter

Apple Coffee Cake:

3 cups all-purpose flour
4½ teaspoons baking powder
1 cup sugar
1 teaspoon salt
1½ teaspoons cinnamon
2 egg
1 cup milk
1 stick melted butter
3 chopped tart apples (granny smith)

Peel and cut apples and cover.

Melt 1 stick butter

Pre-heat oven to 400ºF

Blend first 3 ingredients for Streusel Topping. Work in butter to make a crumbly mixture.

Mix flour with baking powder, sugar, salt & cinnamon.

Beat egg, add milk and melted shortening, and pour all at once into dry ingredients; then add apples and mix well.

Turn into a well-greased 8 x 16 or 9 x 13 baking pan.

Sprinkle Streusel Topping over batter.

Bake for 30 minutes or until both cake and apples test done. 12 servings
