Chicken Crackers for a Low Carb Diet


Almond flour ~ 2 cups
Coconut flour ~ 1 cup
Chia seeds ~ 1/4 cup ~ ground
Garlic powder ~ 1 teaspoon
Dried Parsley ~ 2 teaspoons
Chicken bouillon ~ 11/2 tablespoons
Parmesan Cheese ~ 1 cup
Eggs ~ 4
Coconut oil ~ 1/4 cup
Water ~ 1/3 cup

1. Preheat oven to 325/300 degrees.
2. line a cookie sheet with parchment.
3. In a large bowl combine the almond flour, coconut flour, chia seeds, garlic powder, parsley, chicken bouillon and Parmesan cheese.
4. In a separate bowl, beat four eggs, and mix in the coconut oil.
Combine with the dry ingredients.
5. Add enough water to allow dough ball to hold together.
6. Place small ball on parchment paper, cover with plastic wrap, and roll out to 1/8-inch thickness.
7. Pierce the rolled our dough with a large serving fork and then use a pizza cutter to cut into 2" square pieces. Place parchment paper on cookie sheet. Salt & Pepper if desired.
8. Bake for 26 minutes. Makes Approximately 70 Crackers
